Why cabling a commercial line does not hold

A cable or auger cuts a channel through a blockage and pulls out what it catches. On a residential line clogged with hair, that is often enough, because the pipe wall behind it is relatively clean.

A commercial kitchen line is a different problem. Grease enters warm, cools, and hardens onto the pipe wall in layers, narrowing the bore from the outside in. Four things, and which ones a property needs depends on what runs through the lines.

Grease line jetting. Kitchen waste lines from prep sinks, dish pits, and floor drains, back to the interceptor. This is the highest-frequency service in food service and the one most often done badly.

Main line and lateral jetting. The building’s sewer lateral out to the city main. Slower to foul than a kitchen line but far more disruptive when it blocks, because it takes the whole building down rather than one fixture.
